Professor
I am a Professor in the Department of Retail, Hospitality, and Tourism Management and the Division of Hotel and Restaurant Administration. My major interests are in the areas of food service management, culinary tourism, and food safety. Currently, I am conducting research in food safety training of child care teachers and cooks in the state of Tennessee and development of a model to evaluate the economic impact of culinary tourism. I teach culinary courses that incorporate the scientific aspects of food into a dining experience.
